Pickled Red Onions (great topping for any meal!)

INGREDIENTS

  • ¾ cup vinegar (red, apple cider OR white will all work!)

  • ¼ cup maple syrup

  • 1 teaspoon salt

  • Freshly ground pepper to taste

  • 1 medium red onion, very thinly sliced (circles or half moon shape, whatever your preference)

DIRECTIONS

  1. Mix all ingredients together. Heat the ingredients until steaming. This can be done in a small sauce pan, or you can pour the ingredients into the jar you are storing the onions in and just pop it in the microwave until hot.

  2. Once your brine is hot, pour into your jar or any glass container with a lid that you will store the onions in. Stuff the sliced onions down in the liquid until submerged. Put the lid on tight and let sit for an hour until use, or store them in the fridge for later use.
