Simple Tomato Feta Salad

INGREDIENTS:

  • 3 cups arugula

  • 2 garden fresh slicing tomatoes (multi colored is always prettier)

  • Small cherry tomatoes (optional)

  • 4 oz. Feta

  • 2 tbsp chopped fresh dill

  • 1/2 cup balsamic vinegar

  • 1/4 cup pure maple syrup

  • Fresh cracked pepper

DIRECTIONS:

  1. Stir together balsamic vinegar and maple syrup in a small sauce pan over medium heat. Bring to a boil and let simmer for 15 minutes to reduce.

  2. While your dressing is simmering, create a bed of lettuce with the arugula. Slice your tomatoes, laying on the arugula. Sprinkle on crumbled feta and tiny tomatoes. Sprinkle with fresh dill and cracked pepper. Drizzle with balsamic reduction and serve.
