Maple Bar Pancakes

Pancakes, but in bar form! These are essentially just a classic buttermilk pancake in a fun shape, and topped with a decadent maple glaze instead of just maple syrup. If you have maple cream on hand, that works just as well for the glaze.


INGREDIENTS:

Maple Glaze:

1/4 cup butter, melted

11/2 cups powdered sugar

1/2 tsp maple syrup

1/4 cup whole milk

1 tsp vanilla 

Pancakes:

1 tsp salt

2 tsp baking powder

1 tsp baking soda

2 cups flour

2 tbsp sugar

2 eggs, beaten 

2 cups buttermilk

2 tbsp butter, melted 


DIRECTIONS:

  1. To make the glaze, in a small bowl, whisk together the butter, powdered sugar, maple syrup, milk, and vanilla until smooth. Set aside. 

  2. To make the pancakes, preheat griddle to medium heat. In a medium bowl, whisk together salt, baking powder, baking soda, flour and sugar. In a separate medium bowl, whisk together the eggs and buttermilk, whisk in the melted butter. Make a well in the center of the dry ingredients. Pour in the wet ingredients and stir until just combined, being careful not to over mix.

  3. Butter the hot griddle and scoop 1/3 cup of batter, pouring into a bar-like shape. Cook until bubbles begin to form and underside is golden brown. Flip and cook until second side is golden. Continue with the remaining batter. 

  4. Spread glaze over each pancake and serve.
