Maple Walnut Scones w/ Maple Frosting
INGREDIENTS:
2 cups flour
1/4 cup maple syrup (or 1/3 cup granulated maple sugar)
2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup chilled butter, cut into pieces
1 egg
2/3 cups whipping cream
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup chopped walnuts
Egg wash, 1 egg and 1 teaspoon water, beaten
Sugar and halved walnuts, for topping
FROSTING: * If you are short on time, simply top the scones with maple butter - can’t go wrong!
1/2 cup maple syrup
3/4 cup water
3 Tbsp corn starch
1/4 cup maple syrup
2 Tbsp Butter
1 tsp Vanilla
DIRECTIONS:
Preheat oven: 325 degrees F. and line a baking sheet with parchment paper.
Combine flour, sugar, baking powder and salt. Cut in butter with pastry blender.
Combine wet ingredients and mix into dry just until moistened.
Add walnuts. Mixture will be very sticky. Turn onto floured surface and knead 4 to 5 times with floured hands.
Pat out to 1/2-inch thick and cut circles. Place on parchment.
Brush tops with egg wash. Sprinkle tops with sugar. Bake for 15 to 18 minutes or until golden on the bottoms and tops.
While the scones are baking, prepare frosting:
FROSTING:
Cook 1/2 cup of maple syrup and water until boiling, then add cornstarch mixed with 1/4 cup of maple syrup.
Cook until boiling again, keeping the it well stirred, until the mixture has thickened.
Remove from the heat and add the butter and vanilla .
Spread it on the fresh scones.
